serves 4
1 head of cauliflower
1 garlic clove
1/4 cup extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon brown sugar
1/2 teaspoon Dijon mustard
1 handful of raw cashews
salt and black pepper to taste
- Cut the cauliflower into small pieces
- Make dressing: mince garlic and add olive oil, vinegar, sugar and mustard. Mix well
- Pour dressing over cauliflower, add cashews and toss. Add salt and pepper to taste.
