Latvian potato pancakes
















Makes 7-10 pancakes

2 lbs mealy potatoes
2 large eggs, beaten
1 tablespoon of all-purpose flour
1/2 large white onion, finely chopped
1/2 teaspoon of paprika
1/2 teaspoon of salt
freshly ground black pepper
vegetable oil for frying

soft cream cheese for topping
chives, for garnish
  1.  Peel potatoes and grate them finely into a large bowl. 
  2. Add eggs and mix well.
  3. Add flour, salt, pepper and paprika. Mix well
  4. Add onion. Mix and form into small thin patties (2-3 inch diameters)
  5. Heat 1 tablespoon of oil in a large non-stick pan.
  6. Fry until golden brown, about 2 minutes per side, flipping with spatula.
  7. Serve with cream cheese and chopped chives.
     Editor’s note: 
     Making the patties as thin as possible will ensure even frying.
