Makes 7-10 pancakes
2 lbs mealy potatoes
2 large eggs, beaten
1 tablespoon of all-purpose flour
1/2 large white onion, finely chopped
1/2 teaspoon of paprika
1/2 teaspoon of salt
freshly ground black pepper
vegetable oil for frying
soft cream cheese for topping
chives, for garnish
- Peel potatoes and grate them finely into a large bowl.
- Add eggs and mix well.
- Add flour, salt, pepper and paprika. Mix well
- Add onion. Mix and form into small thin patties (2-3 inch diameters)
- Heat 1 tablespoon of oil in a large non-stick pan.
- Fry until golden brown, about 2 minutes per side, flipping with spatula.
- Serve with cream cheese and chopped chives.
