Cheesecake pie

















cake:      2 8-ounce cream cheese packages
              2 eggs
              3/4 cup sugar
              2 teaspoons vanilla
              1/2 teaspoon finely grated lemon peel
              1 unbaked gram cracker crust
topping: 1 cup sour cream
              2 tablespoons sugar
              2 teaspoon vanilla
  1. Bring all ingredients to room temperature.
  2. Bake crust according to directions. This usually means wetting it with egg whites and baking at 350 for 10 minutes 
  3. In a large bowl, combine ingredients for cake and pour into crust.
  4. Bake in preheated over at 350 for 40 minutes. Remove from oven and let cool for 30 minutes.
  5. Spread topping and refrigerate overnight before serving.
