Turkish borek

















serves 4

1 pack of filo dough sheets (thawed overnight in fridge)
1 egg yolk
black sesame seeds
sauce: 1/2 cup olive oil
           1/2 cup water
           2 tablespoons plain yogurt
           1 egg
filling: 1 pound ground beef 
            1 medium onion
            1/2 cup hot water          
            1-2 tablespoons of tomato paste
            1 bunch parsley, chopped
            2 tablespoons olive oil
            1 teaspoon black pepper
            1 tablespoon oregano
            2 teaspoons red pepper flakes
             1/3 cup of currants
             salt
  1. Heat olive oil in a skillet over medium heat. Add ground beef and cook until liquid is gone.
  2. Add tomato paste and mix well. Add hot water and cook for 5 minutes.
  3. Add currants and cook for another 5-10 minutes.
  4. Turn off heat, add parsley and spices and set aside.
  5. In a bowl, mix together olive oil, water, yogurt and 1 egg
  6. Take a sheet of filo dough, brush with sauce and lay another sheet on top.
  7. Put 1 tablespoon of filling and roll into long rolls. Repeat with remaining filo sheets until filling runs out.
  8. In a small bowl mix egg yolk with 1-2 tablespoons of sauce. Brush the tops of each roll with this mixture. Sprinkle sesame seeds on top.
  9. Spray a large cookie sheet with cooking spray and gently put rolls in.
  10. Bake rolls in preheated oven at 375F until golden brown, about 20-30 minutes.
  11. Remove from oven and cover with damp paper towels to prevent drying out. Serve hot.
